I’m continuing on with the fair food, because I have the sinking feeling that fairs and carnivals will continue to be canceled the closer we get to autumn. Fairs may be canceled, but that won’t stop me from eating my weight in fair FOOD right here in the comfort of my own apartment. And in sweat pants for once, hallelujah. Food is the only reason I go to fairs. At least this way I can do it a little healthier and cheaper.

The highlight fair of my year, The Big E, is still on for September. If we can go and enjoy ourselves and not have to wear masks and be screamed at constantly to SOCIAL DISTANCE!!!!!!!, we are of course going to go and eat our weight in fried foods. I am who I am, okay? Next weekend they’re holding an event where you can eat a whole bunch of Big E food but it’s served drive thru style. This honestly sounds like the world’s biggest nightmare. Traffic there is already a headache. I just envision one long line of cars that you’re stuck in and can’t get out of. You aren’t allowed to get out of your car. You can’t go to the bathroom. How on earth is this possibly going to work? You’ll be eating all kinds of unhealthy food for hours and you also can’t go to the bathroom for hours? Yeah no. I’ll be hiking next weekend, thanks.

I talked about Devil’s Path in my last blog post I believe and we are going to do it next weekend, weather depending! I am so freaking excited. I’ve seen a ton of reviews where people have said it’s way worse than a one day Presidential Traverse (been there done that) and a one day Pemi Loop (doing that this year, but over the course of a weekend, not in one day). I’ve never really analyzed or cared much about how much weight I’ll be carrying with me on a particular hike. However I think for Devil’s Path and the Pemi Loop I will have to put a bit more thought into it. I usually carry things like a book, extra food, extra clothes, things I don’t ever really use. I will not be doing that this time around. No book because we’ll be hiking all of the daylight hours. No extra clothes. I’ll just be stinky. Mike and I have been together for five and a half years now so he’s used to the odor that emerges when we hike. Sorry that got gross there for a little bit. But hey. This is a food AND hiking blog, after all. My point is, I’ve looked at the maps online and some of the ascents look ridiculous. And there are so many of them. I ordered a hiking map of the Catskills today and it’ll be here tomorrow. I can’t wait to spend the weekend poring over it! The things that excite me these days, I swear.

Zucchini Fries

When zucchini is in season, this is the recipe for you! Summer squash is coated with spices and crunch and then air fried to perfection!

Ingredients
  

  • 1 zucchini, washed, dried, and ends removed
  • 2 eggs, whisked
  • 2.5 ounces pork rinds, crushed I used Epic Oven Baked Pork Rinds, Pink Himalayan + Sea Salt flavor crushed in a food processor
  • 1 + ½ tsp Italian seasoning
  • 2 tbsp nutritional yeast
  • avocado oil spray
  • ¾ cup marinara sauce of choice for serving, check labels for Whole30

Equipment

  • Air fryer

Method
 

  1. Cut the zucchini into fry shape of uniform size. I suggest cutting them a little on the larger size because they will reduce in size as they fry.
  2. Get out two shallow bowls. In one bowl whisk the eggs. Add the pork rind crumbs, Italian seasoning, and nutritional yeast to the second bowl and whisk with a fork to combine.
  3. Dredge the cut zucchini first in the egg, shake off the excess, and then dredge in the pork rind mixture. Place in a single layer in the insert of your air fryer leaving space between. Repeat until all of the zucchini pieces have been coated. Spray lightly with avocado oil spray and air fry at 375° F for 10-12 minutes until browned all over and crisp.
  4. Serve hot with warm marinara sauce on the side and enjoy!
