Zucchini Fries

When zucchini is in season, this is the recipe for you! Summer squash is coated with spices and crunch and then air fried to perfection!

Ingredients
  

  • 1 zucchini, washed, dried, and ends removed
  • 2 eggs, whisked
  • 2.5 ounces pork rinds, crushed I used Epic Oven Baked Pork Rinds, Pink Himalayan + Sea Salt flavor crushed in a food processor
  • 1 + ½ tsp Italian seasoning
  • 2 tbsp nutritional yeast
  • avocado oil spray
  • ¾ cup marinara sauce of choice for serving, check labels for Whole30

Method
 

  1. Cut the zucchini into fry shape of uniform size. I suggest cutting them a little on the larger size because they will reduce in size as they fry.
  2. Get out two shallow bowls. In one bowl whisk the eggs. Add the pork rind crumbs, Italian seasoning, and nutritional yeast to the second bowl and whisk with a fork to combine.
  3. Dredge the cut zucchini first in the egg, shake off the excess, and then dredge in the pork rind mixture. Place in a single layer in the insert of your air fryer leaving space between. Repeat until all of the zucchini pieces have been coated. Spray lightly with avocado oil spray and air fry at 375° F for 10-12 minutes until browned all over and crisp.
  4. Serve hot with warm marinara sauce on the side and enjoy!
