Listen, I’m going to keep it real with you right now, like I do. Getting sweet potatoes to really crisp up at home is really hard work. Sweet potatoes done in the air fryer really don’t compare to deep fried sweet potato fries in terms of crunchiness. Regular potatoes? I’ve gotten those pretty close to their deep fried counterparts, and I love every single minute of it. Maybe a little too much. These sweet potato fries still taste absolutely delicious, and they’re definitely still crispy and crunchy in some places, but don’t be thinking they’re going to taste exactly like what you would get at a restaurant. Or, if you happen to have a magical air fryer, let me know which one you have because I want it.

Here I go again. Talking you out of making my recipes. When will I learn?

Do you think we’re starting to turn the corner on winter weather? Last night I got home from work at 5:20, and Mike and I promptly went out for a run. It was 47 degrees when I got home from work and I knew I just couldn’t pass up that kind of weather for February. It was a little on the windy side, but other than that, the weather was absolutely perfect for running. It’s kind of funny. I’ve always said “I’m not a runner.” But then I got good-ish at running. If not good, then definitely at least decent. And then when I was a decent runner, I always claimed to hate running when it was cold outside. If it was under 60 degrees, there was no way I was going out for a run. But this year I decided to be different. I changed my parameters. Mike and I made a rule that if it was 40 degrees or over, we’d go for a run. And now I’m finding that I much prefer running when it’s 45 degrees as opposed to 75 degrees. I haven’t been running long, but I’m glad I figured this out now, even if I am a little late to the party. We ran a 5k last night, and I’m looking forward to many more like it this spring!

What I’m not looking forward to, on the other hand, is the snow melting. I know I know. These things go hand in hand. But this year I’ve also really gotten into winter hiking, and I’ve been loving that too! No bugs, minimal sweating, much fewer people on the trails, absolutely beautiful scenery. Now that I have microspikes, I feel like there’s nowhere I can’t go! Now that I’m really interested in winter hiking, I must confess I’ll be sad to see it go.

Rosemary Honey Sweet Potato Fries

Ingredients
  

  • 1 sweet potato, large, about 1.5 lbs peeled and cut into fry shape of similar size
  • avocado oil spray
  • ½ tsp sea salt
  • 1 tbsp local honey
  • 1 tsp dried rosemary
For the Honey Mustard Dressing:
  • 2 tbsp avocado oil mayo I like Sir Kensington's
  • 2 tbsp local honey
  • 3 tbsp dijon mustard
  • 1 + ½ tsp apple cider vinegar

Equipment

  • Air fryer

Method
 

  1. Place the sweet potato fries in the insert of the air fryer. Spray generously with the avocado oil spray. Sprinkle the sea salt over the fries. Use tongs to toss the fries to coat them evenly.
  2. Air fry at 400° F for 20 minutes, removing every 5 minutes or so to carefully flip the fries with a spatula. After the 20 minutes are up, drizzle 1 tbsp of honey and the rosemary over the fries and toss to coat. Air fry for 10 more minutes, or until browned and crisped to your liking.
  3. While the sweet potatoes air fry, make the Honey Mustard Dressing: combine all of the dressing ingredients in a small bowl and stir to combine.
  4. Serve the fries hot from the air fryer with the Honey Mustard Dressing on the side. Enjoy immediately!
