Rosemary Honey Sweet Potato Fries

Ingredients
  

  • 1 sweet potato, large, about 1.5 lbs peeled and cut into fry shape of similar size
  • avocado oil spray
  • ½ tsp sea salt
  • 1 tbsp local honey
  • 1 tsp dried rosemary
For the Honey Mustard Dressing:
  • 2 tbsp avocado oil mayo I like Sir Kensington's
  • 2 tbsp local honey
  • 3 tbsp dijon mustard
  • 1 + ½ tsp apple cider vinegar

  • Air fryer

Method
 

  1. Place the sweet potato fries in the insert of the air fryer. Spray generously with the avocado oil spray. Sprinkle the sea salt over the fries. Use tongs to toss the fries to coat them evenly.
  2. Air fry at 400° F for 20 minutes, removing every 5 minutes or so to carefully flip the fries with a spatula. After the 20 minutes are up, drizzle 1 tbsp of honey and the rosemary over the fries and toss to coat. Air fry for 10 more minutes, or until browned and crisped to your liking.
  3. While the sweet potatoes air fry, make the Honey Mustard Dressing: combine all of the dressing ingredients in a small bowl and stir to combine.
  4. Serve the fries hot from the air fryer with the Honey Mustard Dressing on the side. Enjoy immediately!
