If you’re going to be hosting a meat-eating veggie hater anytime this holiday season, you should make this recipe. These Brussels sprouts are SO good, veggie lovers and haters alike will marvel at your cooking ability because yeah, they just are that good. Delectable all on their own, I really developed this recipe to be paired with a holiday protein like turkey or baked ham.

I ate probably about half of these Brussels sprouts while I was photographing this recipe and slightly thereafter. I had somewhat of a Miranda Hobbes moment where I almost needed to pour dish soap over these just to that I would stop eating them, but instead I covered them in plastic wrap and buried them deep in my refrigerator so that they would be safe from my grubby fingers until I dug them out for dinner the next night. In case you are wondering, they’re also delicious leftover. I chose to reheat them in my air fryer and MAN was that a delicious idea. The maple sugar caramelizes when you first roast these Brussels anyway, but reheated in the air fryer really takes them to the next level. This is not surprising. As I’ve said before, my air fryer has yet to turn out anything less than delicious. These Brussels leftover are no exception.

Roasted Maple Bacon Brussels Sprouts

A side dish perfect for fall and the holidays that will turn any meat-eating Brussels sprouts hater into their number one fan!

Ingredients
  

  • ½ lb bacon, cut into lardons reserve 3 tbsp bacon fat
  • 24 ounces Brussels sprouts, stems removed and halved
  • 2 tbsp maple sugar
  • 1 tbsp pure maple sugar

Method
 

  1. Preheat oven to 400° F. Line a large sheet pan with parchment paper.
  2. Brown the bacon using your favorite method. I like using my Instant Pot to sauté, but this can also be done on the stovetop as well. When browned, use a slotted spoon to remove the bacon bits and place on a paper towel lined plate. Reserve 3 tbsp of the rendered bacon fat.
  3. Place the Brussels sprouts in a large bowl. Pour 3 tbsp bacon fat over the Brussels sprouts and toss to coat evenly. Once coated. spread out on the parchment paper lined baking sheet. Roast at 400° F for 25 minutes.
  4. Place the Brussels sprouts back in the large bowl. Add the maple sugar, maple syrup, and the browned bacon bits to the bowl and toss to coat evenly. Lay the Brussels sprouts back on to the sheet pan. Roast at 400° F for another 5-10 minutes until the Brussels are softened to your liking. Serve hot and enjoy!
