Preheat oven to 400° F. Line a large sheet pan with parchment paper.
Brown the bacon using your favorite method. I like using my Instant Pot to sauté, but this can also be done on the stovetop as well. When browned, use a slotted spoon to remove the bacon bits and place on a paper towel lined plate. Reserve 3 tbsp of the rendered bacon fat.
Place the Brussels sprouts in a large bowl. Pour 3 tbsp bacon fat over the Brussels sprouts and toss to coat evenly. Once coated. spread out on the parchment paper lined baking sheet. Roast at 400° F for 25 minutes.
Place the Brussels sprouts back in the large bowl. Add the maple sugar, maple syrup, and the browned bacon bits to the bowl and toss to coat evenly. Lay the Brussels sprouts back on to the sheet pan. Roast at 400° F for another 5-10 minutes until the Brussels are softened to your liking. Serve hot and enjoy!
