Any kind of chocolate bark is a favorite of mine during the holiday season. As a bonus, it’s super simple to make and it’s a great thing to make with kids. It’s great for holiday bake sales and it would make a thoughtful teacher’s gift as well.

So here is my spin on peppermint bark! I bet you are wondering why mine looks so different from the traditional peppermint bark you are used to seeing at the store. I’ll be the first to admit that I’m not the biggest peppermint fan. I find that, most often, store bought peppermint bark is way too strong for my taste. It’s like they dump cups and cups of peppermint extract in each package. I say, no thank you. My recipe calls for 1/2 a teaspoon, which is the perfect amount for me. If you are a peppermint lover, feel free to add more to your taste! I also include vanilla extract as well, and I think the flavors complement each other quite nicely.

Of course you can add crushed candy canes if you want to make a more traditional peppermint bark. I’m not huge on candy canes, so I opted instead for gluten free chocolate chip cookies and some more chocolate chips. This bark is very customizable. Press whatever toppings you want into the melted chocolate, let it harden in the fridge for a bit, and dessert is done!

I was on dessert duty this year for Thanksgiving, and I chose to bring some of this bark. Mostly just because I made it for the blog the week of Thanksgiving and I wanted to get it out of the house so that I wouldn’t eat it all. It was a huge hit among everyone at the table! It warms my soul when my friends and family like my recipes.

Peppermint Cookie Bark

A simple recipe for a sweet holiday favorite, peppermint bark! A great activity to make with children.

Ingredients
  

  • 2 cups chocolate chips of choice I use Enjoy Life Mega Chunks
  • ½ tsp pure peppermint extract
  • ½ tsp pure vanilla extract
  • pinch sea salt
  • 2 ounces cookies of choice I use Enjoy Life Crunchy Mini Chocolate Chip Cookies
  • ¼ cup mini chocolate chips I use Enjoy Life

Method
 

  1. Line a large sheet pan with parchment paper.
  2. Add the 2 cups of chocolate chips to a large microwave safe bowl. Microwave for one minute, then stir. Continue microwaving and stirring in 15 second intervals until chocolate has fully melted. Once melted, add in the peppermint and vanilla extracts and stir to combine. Use a silicone spatula to spread the melted chocolate out evenly onto the parchment paper lined sheet pan.
  3. Sprinkle a little sea salt over the melted chocolate. Press the cookies into the melted chocolate. Sprinkle the mini chocolate chips onto the melted chocolate. Place the sheet pan in the refrigerator to harden, about an hour. Break bark into smaller pieces and enjoy!
