Line a large sheet pan with parchment paper.
Add the 2 cups of chocolate chips to a large microwave safe bowl. Microwave for one minute, then stir. Continue microwaving and stirring in 15 second intervals until chocolate has fully melted. Once melted, add in the peppermint and vanilla extracts and stir to combine. Use a silicone spatula to spread the melted chocolate out evenly onto the parchment paper lined sheet pan.
Sprinkle a little sea salt over the melted chocolate. Press the cookies into the melted chocolate. Sprinkle the mini chocolate chips onto the melted chocolate. Place the sheet pan in the refrigerator to harden, about an hour. Break bark into smaller pieces and enjoy!
