Welcome to the second post in The Hungry Hungry Hiker BBQ Series! In case you missed it, I kicked this series off last week with the king itself, BBQ Sauce. Because you can’t have a BBQ Series without BBQ Sauce, naturally.

I am aware that it is still April. But hey, it’s almost May. And I keep thinking that if we keep talking about summer and wishing it closer that maybe it’ll hurry up and get here. It’s amusing to me because a decade ago I never would have been one to want anything at all to do with summer. In my younger years I was much more of a fall and winter kind of gal. However as I quickly approach middle age, I find myself liking cold weather less and less. Better hiking happens in the warmer months. And this year with all of this virus nonsense I think we are all looking forward to summer a little more than usual.

And nothing screams summer like BBQ. I don’t have a grill or any kind of outside living at all at my apartment, but that doesn’t mean I don’t know how to get down with some BBQ. Figuring there are others out there like myself in a similar situation, I’m bringing the BBQ inside to your kitchen! All you need is an oven (I’m assuming everyone that reads this blog at least has one of those) and this fabulous BBQ Sauce. About a half a cup of it, to be exact. Plus more for dipping, because it is just that good.

I can’t wait to churn out even more BBQ recipes for you guys over the coming months. Like I’ve done in the past with Caramelized Onions and several peppermint recipes, when I ask you to buy or make a special ingredient, I want to give you multiple ways to use that special ingredient. Oven Baked BBQ Chicken Breasts

Bring the BBQ inside with this simple, flavorful recipe for a comforting family favorite, barbecue chicken!

Ingredients
  

  • 3-4 boneless skinless chicken breasts
  • sea salt
  • fresh ground black pepper
  • garlic powder
  • 1 tbsp avocado oil
  • ½ cup BBQ Sauce plus more for dipping

Method
 

  1. Preheat oven to 400° F and line a medium sheet pan with parchment paper.
  2. Season chicken breasts to taste with sea salt, fresh ground black pepper, and garlic powder.
  3. Add 1 tbsp avocado oil to a large cast iron skillet over medium high heat. Once hot, add the seasoned chicken breasts to the skillet and sear 2-3 minutes per side. Use tongs to transfer the chicken breasts to the sheet pan.
  4. Bake at 400° F for 10-12 minutes. Remove from oven. Baste with a few teaspoons of BBQ sauce on both sides.
  5. Return to the oven to bake for 5 more minutes. Remove to baste on both sides. Return to the oven to bake for 5 more minutes. Remove from oven and use a meat thermometer to check for doneness. The temperature will read 165° F when the chicken is done. Let rest for 10 minutes before serving. Serve hot with your choice of sides and enjoy!
