Yes, I know, it’s another recipe for chicken wings. But if we know one thing for sure, it’s that people love their chicken wings! There are so many different flavor options out there. So far I’ve created healthy and Whole30 renditions of classic Buffalo and Crispy Garlic (think garlic Parmesan). Since Lemon Pepper is another classic flavor for chicken wings, I just had to do it. And since we get three pounds of chicken wings delivered to our apartment every single month thanks to Butcher Box, I’m constantly trying to figure out different ways to eat them. And now I have three! Don’t worry. There will be more.

So, Mike and I attempted Devil’s Path in the Catskills this past weekend. All I have to say about that is, what an appropriate name for a trail. Devil’s Path is not for the faint of heart. We made it exactly one third of the way when the weather took an abrupt turn for the worse. We knew there was a chance for bad weather, but we were not expecting or prepared for what hit us. As is usually the case, the mountains make their own weather. Even though the forecast for the nearby town didn’t look terrible, the mountains do what they want. And on Saturday, they wanted to absolutely drench us and make sure we had a terrible time.

So we made it to the exact 1/3 point (8.6 miles in) and the downpour started. We located a bailout route and even though we knew it would be miserable, we also knew that it would be easier and a lot safer than trying to continue and make it to the next summit. Our bailout route was about five miles from the car, and what a miserable five miles it was. We thought the rain was bad when we first started, but it got SO MUCH WORSE. We’re in the middle of a drought and the one day we decide to go on a big hike, we get totally rained out. Just our luck. What a fitting theme for 2020.

So I’ll be taking this weekend off from hiking. My mom and her boyfriend bought a boat a few years back. I haven’t been up to see it yet because it’s like 5 hours away, in the Finger Lakes area of upstate New York. But I’ll be making the trek this weekend! There’s supposed to be a 4th of July boat parade on the lake and I’m sure there will be some fireworks to be seen. And chicken wings! No holiday weekend is complete without chicken wings and tasty beverages. What do you have planned for the 4th this year? Anything good?

Lemon Pepper Chicken Wings

Ingredients
  

  • juice from two lemons
  • zest from one lemon
  • ½ tsp fresh ground black pepper
  • 10-12 chicken wings
  • pinch sea salt

Equipment

  • Air fryer

Method
 

  1. Add the lemon juice, lemon zest, and black pepper to a large bowl and whisk with a fork to combine. Add the chicken wings to the bowl and stir to coat the wings completely. Cover the bowl and chill in the refrigerator for at least two hours or longer.
  2. After the wings have marinated for a while, remove the wings from the marinade and pat dry with paper towels. Place the wings on the air fryer tray in a single layer, leaving space in between each wing. Sprinkle each chicken wing very lightly (a little bit goes a long way!) with a little bit of sea salt. Air fry at 400° F for 12 minutes, until starting to crisp and brown and cooked through. Serve hot and enjoy!
