French Onion Meatballs
The Caramelized Onion obsession lives on! As promised, I am here with my second new recipe of the week utilizing my Caramelized Onions. Even though I happen to eat these little delicacies straight out of the pan (I try my best to let them cool off just a little bit first), I didn’t want to leave you with a big ole’ batch of beautiful onions and nothing to do with them. Who would do such a thing? Not this girl. So look at that! Here they are again, in all their caramel colored glory, in case you’ve forgotten how delicious and tasty they are.

What’s the best part of French onion soup? If you answered “the onions,” you’re wrong. I’m sorry but you just are. The best part is obviously that insane crouton raft and all that delicious melty cheese. Crouton rafts and cheese aren’t paleo, however, and they certainly aren’t Whole30 either. It’s a sad world we live in, I know.
Now that I’ve hit you with the bad news, it’s time for the good news! If you’re craving the savory flavors of French onion soup, give these meatballs a try! This recipe is paleo as written and is Whole30 compliant as well as long as you make the Whole30 option when you make your Caramelized Onions.

They’re savory. They’re incredibly flavorful. Nutritional yeast lends a bit of that cheesy flavor that still to this day baffles me. Why does that yeast taste like cheese? Is it even yeast? I have no clue. What I do know is it just works in this recipe, okay?
If I was a normal human, I would eat these meatballs for dinner with a side of mashed potatoes or pureed cauliflower. However, I am very much an abnormal human, so I eat these meatballs at 4:00 pm at my desk at work. That’s when my stomach starts to tell me it’s been a minute since I’ve fed it lunch. So my meatballs end up looking like this.

Minus the wrinkly white tablecloth. Sheesh. What do you think my day job is, an old has-been five star restaurant? Wrong.
Go make these meatballs. Whether you eat them for dinner like a normal person or at odd hours of the day all by themselves, you won’t regret it.

Ingredients
Method
- Preheat oven to 375° F. Lightly grease an 8×8 baking dish with cooking fat of choice. My go to is avocado oil.
- Add the Caramelized Onions to a medium bowl. Using kitchen shears, chop the onions into small pieces, about ½ inch square. Add the rest of the ingredients to the bowl and mix with your hands until combined.
- Using your hands, a cookie scoop, or an ice cream scoop, form and roll into balls and place the meatballs in the baking dish in a single layer. Your meatballs will touch and that is fine. You should get about 20 meatballs from the mixture.
- Bake at 375° F for 20-25 minutes.
