Preheat oven to 375° F. Lightly grease an 8x8 baking dish with cooking fat of choice. My go to is avocado oil.
Add the Caramelized Onions to a medium bowl. Using kitchen shears, chop the onions into small pieces, about ½ inch square. Add the rest of the ingredients to the bowl and mix with your hands until combined.
Using your hands, a cookie scoop, or an ice cream scoop, form and roll into balls and place the meatballs in the baking dish in a single layer. Your meatballs will touch and that is fine. You should get about 20 meatballs from the mixture.
Bake at 375° F for 20-25 minutes.
