It’s a very rare occasion where I actually have enough room in my freezer for my Popsicle mold. I purchased the mold like three years ago and the first time I made Popsicles was last week. So by “rare occasion” I guess what I really mean is “almost never.” I’ve just had so much meat in my freezer for the last year and a half that I’ve had little room for anything else. But the past couple of months I’ve made it a point to eat through our ButcherBox stash of meats in our freezer so that we can cycle them out, and I’m happy to report that we’re almost there! So since we’re almost there, Popsicles it is!

Since I’d never made homemade Popsicles myself, I was unnecessarily worried that they would get stuck in their molds and I wouldn’t be able to get them out. A few hours after I made them Mike came home, got nosey, and ripped the stick right out of one of my Popsicles -_- this left me less than pleased and even more nervous for when the time would come for me to try to get them out of their molds. But after two minutes of quality Internet research I discovered that all I would have to do is run each Popsicle under warm (NOT hot!) water for about ten seconds each, and then they would just ease out of their molds. I did just that, and that’s exactly what happened! So if you too are concerned about stuck Popsicles, fear not and do not let this deter you from making these tasty tasty treats.

Chocolate Covered Cherry Popsicles

Equipment

  • High speed blender
  • Popsicle molds

Ingredients
  

For the Popsicles:

  • 1 13.5 ounce can full fat coconut milk
  • 1 cup fresh or frozen cherries, pitted heaping
  • ¼ cup local honey
  • 1 tsp pure vanilla extract
  • 2 tbsp cacao nibs

For the Chocolate Shell:

  • ¼ cup chocolate chips/chunks heaping, I used Enjoy Life Mega Chunks
  • 2 tbsp coconut oil

Instructions
 

  • Make the Popsicles: combine all of the Popsicle ingredients except the cacao nibs in a high speed blender and blend until combined. Add the cacao nibs and pulse a few times to mix them in. Distribute the mixture evenly among six Popsicle molds up to the fill line. Insert the sticks, place each Popsicle in its holder, and freeze overnight.
  • Make the Chocolate Shell: add the chocolate chunks and coconut oil to a small saucepan and place over low heat. Stir occasionally until chocolate has melted completely and mixture has combined. Remove from heat and let cool almost to room temperature.
  • Remove the Popsicles from their molds by running the plastic part of each Popsicle only under warm (NOT hot!) water for 10 seconds. Gently ease the Popsicle out of its mold. Place on a plate or flat surface. Use a spoon to drizzle the Chocolate Shell over the Popsicles. Wait 20 seconds for the Shell to harden, serve immediately, and enjoy!
