Make the Popsicles: combine all of the Popsicle ingredients except the cacao nibs in a high speed blender and blend until combined. Add the cacao nibs and pulse a few times to mix them in. Distribute the mixture evenly among six Popsicle molds up to the fill line. Insert the sticks, place each Popsicle in its holder, and freeze overnight.
Make the Chocolate Shell: add the chocolate chunks and coconut oil to a small saucepan and place over low heat. Stir occasionally until chocolate has melted completely and mixture has combined. Remove from heat and let cool almost to room temperature.
Remove the Popsicles from their molds by running the plastic part of each Popsicle only under warm (NOT hot!) water for 10 seconds. Gently ease the Popsicle out of its mold. Place on a plate or flat surface. Use a spoon to drizzle the Chocolate Shell over the Popsicles. Wait 20 seconds for the Shell to harden, serve immediately, and enjoy!
