Air Fryer Corn on the Cob
Corn often gets a bad rap among the health food set, but I love me some fresh corn in the summer and I’m not afraid to admit it. A lot of my positive feelings toward food stem from good childhood memories and corn on the cob is no exception. I’ll explain, since I’m sure you’re all dying to know.

My childhood home (that my mom still lives in) is a raised ranch. My dad rebuilt an awesome deck off the back of the house when I was a child and it served as a hangout spot during the nice months for our family and friends. We pretty much lived on that deck. There is a small airport in my hometown that people use to parachute out of and our deck has a prime view of all of the jumpers. On a nice summer weekend, it’s so much fun to watch. It was awesome then and it’s still awesome now. Anyway, any time we ate corn (which was a lot) we would have a corn cob throwing contest after we were done. My parents also built a small rock wall (is this where my rock wall obsession came from?!?!) separating the lawn and the woods that was also part of their lot, and the corn cob throwing contest involved throwing the cob from the deck over the rock wall and into the woods. If you couldn’t clear the rock wall, you had to do the walk of shame onto the lawn and throw your cob over the wall into the woods.

We ate corn so often growing up that we had special dishes that we put our corn cobs in. So obsessed with corn were we that we also had a special container for a stick of butter specifically for buttering our corn on the cob. We didn’t use this butter for anything else and we refilled it several times every summer. Mike is convinced that I turned into such a giant because I had milk every single night at dinner. I think it’s a combination of milk and corn. I wasn’t raised in the Midwest by a long shot, but you couldn’t tell by looking at my childhood diet!

- Lay the husked corn out on a flat surface. Distribute the avocado oil evenly over the corn and use your hands to rub the oil in. Season the corn with salt, black pepper, and dried parsley and use your hands to rub the spices in.
- Place the corn on your air fryer basket spaced apart as best as possible. Air fry at 360° F for 12-15 minutes until softened and starting to brown all over. I flipped my corn once halfway during the 12 minutes to get brown kernels all over. Serve hot with butter and enjoy!
