Spring has officially SPRUNG here in Connecticut. I know because all of the pretty trees in my apartment complex are blooming and it’s such a lovely sight to see. Why can’t the trees keep their flowers for longer than .5 seconds? It’s really such a bummer. Especially since we all knows what immediately follows flowering trees…POLLEN. I’m already starting to see a light layer coating my car every day when I leave work and it is the worst. Spring allergies have arrived with a vengeance.

This past weekend we ventured to Mount Washington for our somewhat annual sledding trip. Last year we invested in a Luno Air Mattress. Because we got it so late in the season, we didn’t have the opportunity to test it out until just last weekend! And now that we’ve tried it, I can officially say that we LOVE it. I didn’t have the best sleep of my life on it, but I think that was because I didn’t bring enough pillows so my neck was uncomfortable. Easy fix. I’ll just bring more pillows next time. I can’t wait for that thing to get some more use this hiking season.

So anyway, Mount Washington was absolutely overrun with humans on Saturday. The weather was incredible for spring sledding, so it’s no surprise that everyone and their brother decided to make that the day to ski/board/sled Tucks. I mean, we were there too after all. We started our hike around 7:30 am and we made it to the bowl of Tuckerman Ravine in less than two hours. Then the fun began! We did probably 6-7 good sled runs and then decided to call it a day. We thought we had waited until all of the skiers possible had made it up and into the bowl. We were trying to time this out because there’s about a half mile stretch of the trail that is really single file, and we knew that it would be challenging to navigate with a hoard of people with skis strapped to their backs heading up the trail. Well, we didn’t time this well at all. We turned a corner and saw a line of at least 60 people heading straight toward us. It wasn’t fun, but we made it down in one piece. Usually we sled down once we get past the narrow section, but there were still so many more people headed up the mountain that we couldn’t do that even. It would have been like trying to ride a sled down an escalator full of people going up. So we didn’t even really try. We were back to the car for 1:00 pm and home with plenty of daylight left. It was a good day and I was in bed by 9:00 that night.

This has been a very long story to say…yay smoothie bowls! Go make these, because be honest with yourself. Is there really anything better than the flavor combination of cherries and almonds? We all know the answer to that question. The answer is no, there is nothing better. So go get after it! I just know you’ll love these as much as I do.

Almond Cherry Smoothie Bowl

Ingredients
  

Smoothie Bowls:
  • 1 cup nut milk of choice I use unsweetened almond
  • 2 tbsp almond butter
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 1 tbsp pure maple syrup
  • 2 scoops collagen peptides sub any protein powder of your choosing, or omit
  • 1 banana, frozen
  • ½ cup cherries, frozen
  • ½ cup cauliflower, frozen
Optional topping ideas:
  • local bee pollen
  • shredded coconut
  • chia seeds
  • almond butter
  • chocolate chips
  • sliced almonds
  • sliced bananas
  • sliced strawberries
  • cherries, pitted
  • raspberries

Equipment

  • High speed blender

Method
 

  1. Add all of the Smoothie Bowl ingredients in the order listed to a high speed blender. Blend 30-60 seconds until combined completely. Distribute smoothie mixture into two bowls.
  2. Top bowls with toppings of your choice. Serve immediately and enjoy!
