Vegan Chocolate Covered Strawberries for Two
It’s Valentine’s Day week! Last week I was really in the mood for treats, so I figured why not whip up some healthier alternatives for you to make for your sweethearts for Valentine’s Day?! Or you can make them for yourself. Honestly that’s what I did for the most part since Mike isn’t huge on sweets. Which is problematic since I still have about 10 pounds of Enjoy Life Mega Chunks in the apartment that he gifted me for Christmas -_-

I’m in the mood for hosting guests. We haven’t had anyone over since we had my friends Dave and Chad over our apartment for Oktoberfest at the end of September. We had such a great time and we said we would do it again soon but then of course we never did, because we’re adults like that. So a few weeks back I texted my mom and asked her if she would be interested in coming over for Valentine’s Day brunch. She’s always having us over for dinners and holidays. Our apartment is so small, but I love hosting (I get that from her I think) so I’m excited to make a feast for her and Dave on Valentine’s Day. I think I’m going to do some sort of French toast casserole that I can prepare a day ahead of time. Actually, that’s my entire plan for the whole meal. Easy recipes I can make ahead of time and just pop in the oven the day of. Do you have any awesome ideas for me? If so, go ahead and drop them below! I am all ears.

I really hope it doesn’t snow on Valentine’s Day. Our apartment complex is under new management this year, and they’ve left threatening notes all over our complex that they will tow our cars if we don’t move them in a timely manner after it snows. But there are really vague rules about what time they’ll be here and exactly when they’ll be doing what. They also want us to park on the street which is like a half mile away from our unit, and we usually can’t do that since there’s a parking ban. It’s just not a good time all around. But throw some guests into the mix? Yuck. Imagine my mom and her boyfriend come over for Valentine’s Day, and then they get their car towed. I swear, that would be just my luck. How romantic. Happy Valentine’s Day! Here’s a $200 bill for towing!

Vegan Chocolate Covered Strawberries for Two
Ingredients
Method
- Line a small sheet pan with wax paper. If you are using toppings, lay them out on plates or small bowls so that you have everything ready to dip.
- To melt the chocolate, pour the chocolate chunks into a medium microwave safe bowl. Microwave for 30 seconds. Remove from the microwave and stir, from the outside working your way in. Repeat in 15 second intervals until the chocolate is mostly melted and very few visible chunks remain. This usually takes me about 1 minute to 1 minute and 30 seconds.
- Once the chocolate has melted, tip the bowl toward your body so that all of the chocolate collects in one area of the bowl. Grab one strawberry by its stem and dip it into the chocolate, covering the strawberry all around and almost up to the stem. If you are using toppings, add them immediately after you coat the strawberry with the chocolate. You can either dip the strawberry in the topping, or place the strawberry on the sheet pan and sprinkle the topping over your strawberry. Repeat until all of your strawberries have been dipped.
- Place the strawberries in the fridge so that the chocolate hardens. Chocolate Covered Strawberries are best enjoyed the day that they are made.
