Vegan Chocolate Covered Strawberries for Two

Skip the store bought chocolate covered strawberries...they are so much cheaper, tastier, and healthier to make at home! Let this guide walk you through the process step by step for the best chocolate covered strawberries you've ever had!

Ingredients
  

  • 8 ripe strawberries with green, leafy stems washed and allowed to air dry completely at room temperature
  • ¾ cup Enjoy Life Mega Chunks, heaping sub any vegan chocolate of your choosing
Optional toppings
  • Enjoy Life Mini Chocolate Chips
  • shredded coconut
  • chopped nuts pecans, macadamia, almonds, walnuts, etc.

Method
 

  1. Line a small sheet pan with wax paper. If you are using toppings, lay them out on plates or small bowls so that you have everything ready to dip.
  2. To melt the chocolate, pour the chocolate chunks into a medium microwave safe bowl. Microwave for 30 seconds. Remove from the microwave and stir, from the outside working your way in. Repeat in 15 second intervals until the chocolate is mostly melted and very few visible chunks remain. This usually takes me about 1 minute to 1 minute and 30 seconds.
  3. Once the chocolate has melted, tip the bowl toward your body so that all of the chocolate collects in one area of the bowl. Grab one strawberry by its stem and dip it into the chocolate, covering the strawberry all around and almost up to the stem. If you are using toppings, add them immediately after you coat the strawberry with the chocolate. You can either dip the strawberry in the topping, or place the strawberry on the sheet pan and sprinkle the topping over your strawberry. Repeat until all of your strawberries have been dipped.
  4. Place the strawberries in the fridge so that the chocolate hardens. Chocolate Covered Strawberries are best enjoyed the day that they are made.
