I swear I’m not trying to be the bearer of bad news here, really I’m not, but it’s becoming increasingly obvious that we’re NOT going to have a fair season this year. Thanks so much, coronavirus. You’re a real doll. I just heard that L.A. County extended their stay-at-home orders for another three months. If you live there, I don’t know how you’re doing it. Good for you is all I have to say! Try to hang in there. I’m sure it’s not easy, but I’m also sure that snacks might help. Snacks are the best.

One of my very favorite foods to purchase at carnivals are fried pickles! I remember the first time I ever heard of fried pickles. It was over a decade ago and Jersey Shore was in its heyday on MTV. Snooki mentioned fried pickles one time and then all of a sudden they became all the rage. And for good reason. They are dang tasty! I can’t believe it took Snooki of all nouns to introduce fried pickles to the masses.

So, naturally, I felt compelled to create a gluten free version for the blog that I could enjoy guilt free any time I please! Sure they aren’t the prettiest things you’ve ever seen, but they are dang delicious and let’s be honest. That’s what really counts. And even BETTER. Take a look at that batter. When you take a bite, the batter doesn’t just fall off in one giant heap of disappointment. Oh no. This batter is here for the long haul. Well, however long the rest of your pickle spear lasts after you’ve taken that first incredible bite.

Are you watching more TV with all the downtime you may or may not have right now? We’re not watching any more TV than usual. However I did decide to re-watch all of the Boy Meets World episodes from start to finish. Thank God for Disney Plus. Mike, of course, is absolutely thrilled about this decision seeing as we have one TV that we share between the two of us. I watched Boy Meets World a lot when I was probably 10 but haven’t really seen it since then. The Friday night TV lineup was LIT. Sabrina the Teenage Witch, Boy Meets World. What else was there? I can’t remember the whole lineup now 20 years later but I remember absolutely loving all the shows.

Boy Meets World really hooked me in the early seasons this time around because I forgot how freaking adorable Morgan is. She is so adorable and so funny and so sassy and her scenes are so entertaining to watch. But then all of a sudden at the beginning of season 3 she just up and disappeared! Morgan was out of the show for SO many episodes. I made a comment to Mike about how much I missed Morgan, because you know, that makes sense, and then all of a sudden Morgan enters the show randomly during one episode as A COMPLETELY DIFFERENT ACTRESS. I absolutely cannot stand when shows re-cast characters and then just play the new actor off as the same character like nothing ever happened. It’s one of my great pet peeves in life. It’s such a silly thing to complain about, especially right now, but I got attached to the OG Morgan, okay? She was the best. She was the daughter I hope to have one day. Complaining about dumb things like changing actresses reminds me of simpler times. Like 2019. The good old days.

Anyway. Go make some pickles. Feed them to your family. Serve them with Ranch Dressing and Campfire Sauce. You won’t regret it.

Air Fried Pickles

A special gluten free rendition of a carnival snack favorite – fried pickles!

Ingredients
  

  • 8-10 pickle spears, patted dry I used Grillo's
  • ½ cup almond flour
  • ½ tsp sea salt
  • ¼ tsp fresh ground black pepper
  • ¼ tsp cayenne pepper
  • 2 eggs
  • 4 ounces almond flour crackers, crumbled (I used a food processor) I used half an 8.5 ounce Simple Mills Sea Salt package
  • avocado oil spray
  • Ranch Dressing for serving
  • Campfire Sauce for serving

Equipment

  • Air fryer

Method
 

  1. Set out three shallow bowls. To one bowl, add the almond flour, sea salt, black pepper, and cayenne pepper. Whisk with a fork to combine. To the second bowl, crack the two eggs and whisk with a fork. To the third bowl, add the cracker crumbs.
  2. Dredge one pickle spear in the almond flour mixture, and then the egg, and then the cracker crumbs, shaking off the excess after each step as you go. Place in a single layer in the air fryer basket, leaving space in between each pickle spear. Spray each pickle spear lightly with avocado oil spray.
  3. Air fry at 400° F for 7-9 minutes, until pickle spears are crisp and starting to brown. Serve hot with your choice of dipping sauces, like Campfire Sauce or Ranch Dressing. Enjoy!
