Vegan Pumpkin Cheesecake Dip
As promised, fall recipes are here! No more Popsicle recipes for the foreseeable future. I’m not sad to see summer go, but I am sad that it’s no longer socially acceptable to post Popsicle recipes. Bummer. See ya next spring, tasty Popsicle recipes!
When it comes to fall inspired baked goods, are you on team pumpkin or team apples? I am on team pumpkin ALL DAY. Pumpkin ideas are overflowing my brain right now and I can’t wait to test them out in my kitchen this coming weekend. I just wish the weather would cooperate, but it’s a little too early for 60 degree days. I keep checking the weather several times a day like a mad woman hoping to see days in the near future that have highs of 65 degrees, but no such luck. Not yet anyway. I bring this up to say that days like that make for the best recipe development days. Soon, friends. Soon!
This time of year, end of summer / early fall, I am always in the mood to watch Gilmore Girls. It’s THE fall show for teens and young adults, especially for those of us who live in New England. Anyway, here I sit, watching Gilmore Girls for the 87th time in my life. As I’m sure you can guess, Mike is THRILLED about this. Maybe one day we won’t live in a loft style apartment and we can watch separate shows on two different tv’s at the same time. Life goals.
Over Labor Day weekend Mike and I went hiking in the Berkshires. We knocked another 10 miles off our section hike of the AT in Massachusetts, so that was pretty neat. We crossed paths with a solo thru hiker a few times, and where Mike left to bike back to the car and I sat to wait for him, the thru hiker and I sat and chatted with one another for quite a while. Anyway, she was asking what Connecticut was like because she hadn’t hiked through the AT in Connecticut at all yet. I told her that the very popular and extremely excellent show Gilmore Girls was based in the great state of Connecticut, right in the very part of the state that she would be hiking through! Imagine how let down and shocked I was when she nonchalantly stated: “Oh. I think I’ve heard of that show, but I’ve never watched it.” Excuse me, WHAT?! It was then and there that I knew she and I would never be life long friends. She’s probably out of Connecticut already and she probably didn’t even appreciate it while she was here. For shame! Contrary to popular belief, Connecticut isn’t all bad. The western part of the state, where the AT hugs the CT/MA state line, is a pretty lovely part of the state. Every time I head out there to hike I feel very happy to be able to do so.
What a ramble this has turned into. Go make this pumpkin dip. It’s lit.

Method
- Place the cream cheese, sour cream, and canned pumpkin in a large bowl. Use an electric hand mixer on medium speed to whip and combine completely. Mix in the vanilla extract, sea salt, pumpkin pie spice, and maple sugar. Taste and add in more maple sugar if you prefer it sweeter. Transfer the dip to a smaller bowl if preferred. Cover and chill in the refrigerator for two hours or overnight.
- Just before serving, crush the pecan cookies until they are about the consistency of coarse sand. Sprinkle the crushed cookies around the outside of the dip. Serve immediately with your dippers of choice and enjoy!
