It’s easy to eat healthy and make good choices when the food you’re eating is beautiful, no? I think so, anyway! Something about the beauty and yet simplicity of smoothie bowls has always attracted me to them. I’m really not one for regular old smoothies in a cup, but put it in a bowl, hand me a spoon, and put all these gorgeous toppings on it?! I am ABOUT that life.

My favorite thing about smoothie bowls is how customizable they are. Want some extra sweetness at breakfast? Put a few extra slices of fruit on top. Can’t get enough of that coconut flavor? Sprinkle it on top to your heart’s content. No matter what you decide to do with this bowl, make it beautiful. Make it Instagram worthy. Strawberry Coconut Smoothie Bowl

Ingredients
  

  • 1 banana frozen
  • 1 cup strawberries frozen
  • ¼ cup coconut milk canned
  • ¾ cup nut milk of choice from carton
  • 1 tsp vanilla extract
  • 1 tbsp nut butter of choice
  • 2 scoops collagen peptides (sub protein powder of choice)
  • ¼ cup coconut flakes, plus more for topping
Toppings – pick and choose what you like!
  • coconut flakes
  • sliced banana
  • sliced strawberries
  • coconut chips
  • mini chocolate chips (I use Enjoy Life)
  • bee pollen local
  • hemp hearts
  • anything else you're feeling today!

Equipment

  • High speed blender

Method
 

  1. Combine all of the smoothie ingredients in a high-speed blender and blend until combined. Pour smoothie into a bowl.
  2. Top with toppings of your choice and enjoy!
