Bacon Wrapped Dates
If you’re looking for a super simple appetizer recipe for your upcoming holiday parties, you’ve come to the right place! I know that bacon wrapped dates have been around for a little while, but to my knowledge most people stuff them with some sort of cheese or nothing at all. My version brings something a little different to the table!

This recipe was inspired by my favorite local restaurant, Republic. Republic is a great gastropub about ten minutes down the road from my office. I go once a month after work to catch up with my friend and former coworker Shannon. We have a great time every month because the food and service are both great! We always request our favorite server Colleen who is super fun and always has entertaining stories to tell. She also sometimes sneaks us treats so that we can try something new. If I’m a creature of habit, Shannon definitely is. I think I’ve only ever seen her order two menu items: the plain Jane burger or fish and chips, and 9 times out of 10 she goes the burger route. I can’t say as I blame her. Their burgers are so good and I always get a burger or a sandwich myself.

I’m really going off on a tangent here. But you should be used to that by now. I say that Republic inspired this recipe, but I use the word “inspired” loosely. Really, this is Republic’s recipe that I baked in the oven instead of deep fried. But how many more things could you possibly add to something like bacon wrapped dates?

Of all of the different foods Colleen has brought us to sample, the bacon wrapped dates are by far my favorite. So much so that I knew I had to make them for my blog. These are so simple to make and please a wide variety of guests. Except vegetarians and vegans, I guess, but that sounds like their loss. More for you!


Bacon Wrapped Dates
Ingredients
Method
- Preheat oven to 375° F. Line a small sheet pan with parchment paper.
- Remove the bacon from the packaging in one large piece. Place the slab on a cutting board and cut the slab of bacon in half so that each piece of bacon is now half as long.
- Cut each date in half along the length on one side only. Stuff two pistachios in the center of each date and close. Repeat until all of the dates and pistachios are gone.
- Wrap each date with one bacon piece. I placed the date at the very end of the bacon piece and simply rolled it up. Place the bacon wrapped dates in a single layer on the sheet pan.
- Bake at 375° F for 23-25 minutes until fat has rendered and bacon starts to brown throughout. It will be crisp on the edges and colored throughout. Serve hot with toothpicks on the side for easy snacking.
