Total Time 35 minutes
Servings: 16 dates
Course: Appetizer
Cuisine: American

Ingredients

  • 8 slices bacon check labels for Whole30
  • 16 dates pitted
  • 32 pistachios shelled

Method

  1. Preheat oven to 375° F. Line a small sheet pan with parchment paper.
  2. Remove the bacon from the packaging in one large piece. Place the slab on a cutting board and cut the slab of bacon in half so that each piece of bacon is now half as long.
  3. Cut each date in half along the length on one side only. Stuff two pistachios in the center of each date and close. Repeat until all of the dates and pistachios are gone.
  4. Wrap each date with one bacon piece. I placed the date at the very end of the bacon piece and simply rolled it up. Place the bacon wrapped dates in a single layer on the sheet pan.
  5. Bake at 375° F for 23-25 minutes until fat has rendered and bacon starts to brown throughout. It will be crisp on the edges and colored throughout. Serve hot with toothpicks on the side for easy snacking.
