Peppermint Patty Protein Shake
Yes yes, I am aware that this is my THIRD peppermint post this month. But you know what’s the worst? When you buy a special ingredient for ONE recipe and then you don’t know what the heck else to do with the remainder of said ingredient. So if you, like me, purchased a bottle of peppermint extract this season, I want you to know that I’ve got your back. Make some Peppermint Brownies. Make some Peppermint Cookie Bark. Make this delicious protein shake and sneak some extra greens into your day. Thank me later.

If I can give you one word of advice when making this recipe, I want you to know that pure peppermint extract is pretty dang strong. I will admit that I got a little tipsy off my shake when I made it for myself, and that is because I put too much peppermint extract in my blender. The bottle of peppermint extract I have pours oddly, so when I try to measure the amount I want I usually end up with something like double the amount I was originally going for. Fun times on a Sunday afternoon at 1:00 pm. So when you make this recipe for yourself, start with 1/4 tsp of peppermint extract. Try the shake when you’ve finished blending everything together. If you want a little more peppermint flavor, add a little more in. You can always add more but you can’t really remove it if you’ve put in too much.

SPEAKING of precious…Mike and I recently got Disney Plus. I told myself I was going to hold off until Lizzie McGuire came out. But we were at a Christmas party this past weekend. My friends have Disney Plus and they put on the new Star Wars show. I’ve been seeing the Baby Yoda meme all over social media and I haven’t really thought much of it. But as soon as I saw Baby Yoda in the show, I was instantly hooked. It’s just so dang cute! Every scene he’s in I just about cry because he’s so adorable. I can’t help myself. So now instead of watching Christmas movies, we watch the Star Wars show after dinner. I tune out until I see Baby Yoda pop on screen. I giggle with glee during all of his scenes. Then as soon as his scene is over I go back to blogging or texting or scrolling social media or whatever. Don’t ask me what’s going on in the show because I have no clue. But Baby Yoda makes the $7 a month well worth it. Jon Favreau, you are a genius.

Do you get oddly attached to random TV show characters? Baby Yoda is a given. The whole world loves that little guy right now. The only other character I’ve ever been remotely attached to is Janice from Friends. She is so freaking funny I laugh hysterically during all of her scenes. I’m sure the neighbors that we share walls with just love that. I really need to start watching just Janice compilations. That and Baby Yoda. Those probably exist, right? It’s almost 2020. They must! I’d get back so many hours of my life that way!

- Add all of the ingredients to a high speed blender and blend until combined completely. Pour into a glass. Garnish with extra cacao nibs if desired and serve immediately.
