“Lime in the Coconut” Energy Balls
I remember giving a presentation once in my managerial communications class in college. I started with a quote from the textbook: “Change is the only constant in the business world today.” I have a bit of an odd memory and even though I took that class nine years ago (gulp) I still remember that quote to this day. I am absolutely terrible at dealing with (and eventually accepting) change in my personal life. And I guess a little bit in my professional life too. So much is changing lately and I’m left with that negative inkling that I just don’t know how to deal. I hate it.

Summer Rain is moving! I am so beyond bummed about it. She is from Virginia but she’s lived in Connecticut for the past few years. She just accepted a new job in Virginia because she wanted to be closer to her family. Completely understandable. I’m happy that she will be closer to her family and that she’s also making a step up career-wise, however the selfish part of me wants her to stay right where she is so that she can hang out and hike with me forever! That’s a completely reasonable request, no? Sure, we’ve only been friends for a year, but in that short amount of time she quickly became one of my best friends. She lives five minutes down the road and every time we both happen to have a few hours to spare, we’ll head out with her dog Cooper and walk around a park or forest for a little while. That’s what I’ll miss the most about her not living here anymore.

I don’t have anyone else in my life like that. My next closest friends live about 30 minutes away, and most of my friends aren’t interested in outdoor activities like Summer Rain and I am. Mike is generally only interested in hiking if it’s a big hike. He’s definitely not interested in walking around the woods near us at 8:00 on a Sunday morning. So I guess from now on I’ll be that weirdo out there alone armed with a Swiss army knife and some pepper spray. Great. Can’t wait.

I also have a couple of really awesome coworkers who are on their way out the door. I’m definitely less disappointed about this, but it does sadden me because I do spend ~50 hours every week at my day job. Having awesome, helpful coworkers makes the day go by faster and makes my time spent there a little more enjoyable. I can only hope that whoever they decide to bring on as replacements aren’t awful human beings. Only time will tell!

Mike said he thought these energy balls needed MORE lime. I thought they had just the right amount of lime, thank you very much. As you will see, these energy balls contain the juice of two limes plus the zest of one. That leads to pretty limey balls, folks! Mike is still sick if you can believe that, so maybe he just couldn’t fully taste all that lime up in there.

“Lime in the Coconut” Energy Balls

Method
- Line a small sheet pan with parchment paper or wax paper. Pour a small amount (you should only need 1/3 cup or so) of coconut flakes into a shallow bowl.
- Place all of the ingredients in a food processor and pulse until combined. If your mixture seems too dry, add more coconut oil one teaspoon at a time until you reach a consistency that you can easily form and roll into 1.5" diameter balls.
- Roll each ball in the shredded coconut and place in a single layer on the sheet pan. Refrigerate for two hours until firm. Store in an airtight container in the refrigerator.
