Cheeseburger Sliders
I am here to tell you once again that no cheese was harmed in the making of this recipe. But again, I just can’t bring myself to use quotations in the titles of my recipes. So if you are severely disappointed by the name of this recipe, I apologize. But give it a try! If you are a person who prioritizes your health, I guarantee that you will not be disappointed with these sliders.

These sliders are paleo and Whole30 as written and are a hit among picky eaters. I don’t have kids, but if I did I would absolutely make this recipe for them. Letting them have fun customizing their own dinner with toppings of their choice would probably be their favorite part. As an added bonus, this recipe is filled with hidden vegetables! I’m all about getting as many vegetables in my body as possible and this recipe definitely helps with that.

If you aren’t short on time, I strongly suggest adding bacon to this recipe. Because everything is better with bacon. Duh. I didn’t include bacon in this recipe only because I wanted to keep this dish weeknight friendly. What does that mean to me? It means that it has to come together rather quickly, because who has hours to spend in the kitchen making dinner when you’ve already spent hours tied to your desk? You have other things to do, I know. But anyway, if you do have time to cook up some bacon in your skillet before cooking the onions and beef, DO. IT. UP. You won’t regret it. I just know this.

It’s now the last week of February and there is absolutely ZERO snow on the ground here in Connecticut. I HATE it. I’m pretty sure it hit 60 degrees today. Not that I could get out and enjoy it or anything. That whole tied to your desk thing I mentioned above, you know? What is even the point of 25 degree weather for most of the season if it doesn’t bring some snow with it? I bought Mike snow shoes for Christmas this year. I should have known that this act alone would result in a snowless winter. I just want to take my XC skis out to the rail trail and get a little winter exercise in free of charge. But no can do. And soon it will be March and March is the ACTUAL worst.

Ingredients
Method
- Preheat oven to 400° F. Line a large sheet pan with parchment paper. Place the potato slices on the sheet pan in a single layer. Melt 1 tbsp ghee. Brush the melted ghee on to the potatoes and season potatoes to taste with sea salt. Bake at 400° F for 20-25 minutes until soft when pierced with a fork.
- While the potatoes bake, add 1 tbsp of ghee to a large cast iron skillet over medium heat. Once melted, add the diced white onion. Saute 2-3 minutes until starting to soften. Add the 2 lbs of ground beef and season with a little sea salt. Use a spatula to break up the beef into smaller pieces. Once browned, add in the torn kale and stir to combine.
- While the ground beef browns, steam the cauliflower according to package directions (I used the microwave for 7 minutes). Empty the cauliflower into a large mixing bowl. Add the garlic powder, onion powder, sea salt, black pepper, and chicken broth. Use a hand mixer to mix until well combined. Stir in the nutritional yeast.
- Add the cauliflower mixture to the cast iron skillet and stir to combine completely. Taste and add more salt if desired. Remove from heat.
- To assemble, place a few sliced potatoes on a plate. Top with the beef and cauliflower mixture. Garnish with red onions and pickles if desired. Serve hot and enjoy!
