Vegan Triple Chocolate Chip Contest Cookies

A vegan, no-bake dessert made with just four simple ingredients! The best part? The sweet and easy chocolate chip frosting that you'll find stuffed in the middle!

Ingredients
  

  • 1 cup Enjoy Life Mega Chunks, heaping
  • 1 tub vanilla frosting of choice I used Miss Jones, but Duncan Hines also has some varieties that are vegan and free from the common allergens!
  • 3 tbsp Enjoy Life Mini Chips
  • 1 6 oz package Enjoy Life Crunchy Mini Chocolate Chip Cookies

Method
 

  1. Line a large sheet pan with wax paper. Set aside.
  2. Pour the Enjoy Life Mega Chunks into a medium microwave safe bowl. Microwave for 30 seconds, then stir. Microwave in 15 second increments, removing from the microwave to stir, until just melted. Set the bowl aside to let cool a bit.
  3. Stir the frosting with a butter knife until combined, smooth, and creamy. Stir in the 3 tbsp of Mini Chips until distributed evenly throughout.
  4. Empty all of the cookies out onto a flat surface. To assemble the cookie sandwiches, take one cookie and use the butter knife to spread a small amount (about ½ tbsp) of the frosting mixture onto the cookie. Take another cookie and press it down on top of the frosting. Smoosh it down and wipe the excess frosting from around the cookie. Drag the cookie through the melted chocolate so that ¼ - ½ of the cookie becomes coated in the melted chocolate. Place on the sheet pan and repeat until all of the cookies are gone.
  5. Once all of the cookie sandwiches have been made, place the sheet pan in the refrigerator for 15 minutes or so until the chocolate has hardened. Serve and enjoy!
