Vegan Hot Chocolate

A completely dairy-free recipe for a classic holiday favorite - hot chocolate!

Ingredients
  

  • ¼ cup coconut milk, canned
  • 3-4 tbsp mini chocolate chips I used Enjoy Life
  • ¾ cup nut milk of choice, from a carton I used Elmhurst 2 ingredient cashew
  • pinch cinnamon

Method
 

  1. Add the canned coconut milk and the chocolate chips to a small saucepan over medium heat. Stir constantly. When the chocolate has melted completely, add the carton nut milk and cinnamon. Increase the heat to medium high. Remove from heat just before the hot chocolate reaches a boil. Pour into a mug and serve warm!
