Snickerdoodle Energy Balls

Ingredients
  

  • 1 tsp cinnamon, divided
  • 3 tbsp maple sugar, divided
  • 1 cup cashews
  • 8 dates pitted
  • ¼ cup collagen peptides sub any protein powder that you like the taste of
  • 3 tbsp butter melted
  • pinch sea salt
  • 1 tsp pure vanilla extract

Method
 

  1. Line a small sheet pan with wax paper.
  2. Add ½ tsp cinnamon and 2 tbsp maple sugar to a small bowl and whisk with a fork to combine. Set aside.
  3. Add the cashews, dates, collagen peptides, butter, sea salt, vanilla extract, ½ tsp cinnamon, and 1 tbsp maple sugar to a food processor. Turn the food processor on and run until nuts have broken down and mixture is combined.
  4. Use your hands or a cookie scoop to form the mixture into balls. If you find the mixture is too dry, add in a little more melted butter and pulse to combine. As each ball is formed, roll it in the small bowl with the cinnamon and maple sugar. Place the coated energy balls in a single layer on the wax paper lined sheet pan. Chill in the refrigerator for at least one hour. To serve, you can either eat them chilled or you can let them warm up for 10 minutes or so. Enjoy!
