Pumpkin Pie Smoothie Bowl

Pumpkin pie, but make it socially acceptable to eat for breakfast. Look no further!

Ingredients
  

For the Smoothie Bowl:
  • ¾ cup nut milk of choice I used unsweetened almond milk from a carton
  • ½ cup pumpkin puree not pie filling
  • 2 tbsp pure maple syrup more if you prefer sweeter
  • 1 tsp pure vanilla extract
  • 1 banana, large, frozen
  • ¼ - ½ tsp pumpkin pie spice
  • 2 scoops collagen sub protein powder of choice, or you can omit entirely
Optional toppings include:
  • local bee pollen
  • pecans, chopped
  • coconut flakes or chips
  • cacao nibs
  • pecan cookies, roughly chopped or crushed I used Simple Mills Crunchy Toasted Pecan Cookies
  • cashew or almond butter

Equipment

  • High speed blender

Method
 

  1. Place all of the Smoothie Bowl ingredients into a high speed blender. Blend until combined completely. Pour the smoothie into a medium bowl.
  2. Top with optional toppings of choice, serve immediately, and enjoy!
