Peach Cookie Crisp with Cinnamon Honey Butter

Want to make peach crisp, but don't want to make enough to feed a small army? This recipe makes a few servings (but can easily be doubled or tripled if you want to feed more!) and is done in a fraction of the time.

Ingredients
  

  • 3 tbsp salted butter at room temperature
  • 1 tbsp local honey
  • ½ tsp ground cinnamon
  • 2 peaches washed and dried completely
  • 6 pecan cookies, crushed I used Simple Mills Crunchy Toasted Pecan Cookies
  • ice cream of choice or whipped cream, for serving optional

  • Air fryer

Method
 

  1. Add the butter, honey, and ground cinnamon to a small bowl and stir with a spoon until combined completely. Set aside.
  2. Line the insert of your air fryer with parchment paper and cut off the excess paper.
  3. Use a small paring knife to cut each peach in half, starting with the knife going into the top of the peach where the stem would be and cutting the peach in half that way around the pit. Remove the pit from the peach and place the peach halves cut side up on the parchment paper lined air fryer basket.
  4. Air fry at 375° F for 5 minutes. Remove from air fryer. Use a small pastry/basting brush to distribute half of the butter onto the peach halves and brush all over. Distribute the cookie crumbs over the peaches and top with the remaining butter. Air fry at 375° F for 3 minutes more until butter has melted and cookie crumbs are starting to brown and turn fragrant. Remove from air fryer.
  5. To serve, place one peach half in a small bowl and top with ice cream and/or whipped cream if using. Serve immediately and enjoy!
