Caramelized Onion and Bacon Stuffed Burgers

Ingredients
  

  • ½ batch Caramelized Onion recipe
  • ½ lb uncured smoked bacon check labels for Whole30
  • 1 lb ground beef
  • 1 tsp onion powder
  • sea salt and pepper to taste

Method
 

  1. Cut bacon into lardons. In a large cast iron skillet, crisp bacon over medium to medium high heat. Once crisp, remove bacon with a slotted spoon to cool on a paper towel lined plate. Reserve 2 tbsp of bacon fat in a small bowl. Clean and dry skillet.
  2. In a medium bowl, chop Caramelized Onions into small pieces, roughly 1/2 inch square. I like to reserve some Caramelized Onions to the side to put on top of the finished burgers. You can do this either before chopping the onions or after, or not at all. To the medium bowl, add the ground beef, onion powder, sea salt, and pepper. I also like to reserve some cooked bacon to add to the top of the burgers. If you want to do this as well, put a bit of bacon to the side with the reserved Caramelized Onions. Add the remainder of the bacon to the medium bowl. Mix with your hands until combined and form into patties. I yielded five patties.
  3. Add the 2 tbsp of bacon fat back to the skillet over medium high heat. When hot, add the patties to the skillet. Cook for seven minutes and then flip. Cook until the patties reach 160 degrees and have a nice golden sear on both sides. This can take up to 15-20 minutes total. Top with the reserved Caramelized Onions and bacon and enjoy!
