Line a small pan with parchment paper.
Combine all ingredients except for the chocolate chips into a food processor and pulse until combined. When combined, remove mixture and place into a medium sized bowl. Fold in the chocolate chips.
Roll mixture into 1.5" balls.
If you want to coat your energy balls with coconut, cocoa powder, or chocolate chips, now is the time to do it! Put a small amount of your topping of choice into a small bowl and roll the ball until covered. For the cocoa powder, you might want to use a spoon to lightly dust the energy balls instead of rolling the balls in the powder.
Place the balls on the parchment paper lined sheet pan and place in the refrigerator to chill for at least an hour, preferably overnight. Yay tasty chocolate balls!
