Air Fried Oreos

No carnival? No problem! Make fried Oreos at home much, much healthier with the help of a gluten free batter and your air fryer!

Ingredients
  

  • ¼ cup almond flour
  • 2 tbsp tapioca flour/starch
  • 1 tbsp coconut flour
  • 1 tbsp coconut sugar
  • ¼ tsp baking soda
  • ¼ tsp cream of tartar
  • pinch sea salt
  • 1 tbsp coconut oil melted
  • 1 egg
  • ½ tsp pure vanilla extract
  • 3 tbsp unsweetened almond milk
  • 9 gluten free chocolate cream sandwich cookies I have used both Glutino and Goodie Girl
  • melted chocolate for drizzling or dipping, optional, I used Enjoy Life Mini Chips
  • organic powdered sugar for dusting, optional

Method
 

  1. Add all of the dry ingredients to a medium bowl and whisk with a fork to combine. Stir in the coconut oil, egg, and vanilla extract. Stir in the almond milk one tablespoon at a time. Batter will be a bit on the thicker side.
  2. Preheat air fryer to 375° F.
  3. Get out 9 parchment paper muffin liners (see Note) and place on your air fryer tray. Scoop 1/2 tbsp of the batter into the center of each cup. Place one cookie in each cup on top of the batter and press down so that you see the batter start to come up around the sides of the cookie. Top each cookie with another 1/2 tbsp of batter and spread the batter around to cover the cookie completely.
  4. Air fry at 375° F for 4-5 minutes until the tops are starting to turn golden brown and the batter has dried.
  5. Serve hot with toppings of choice and enjoy!

Notes

Do not use regular muffin liners or silicone muffin liners in this recipe. The batter will stick to regular muffin liners and when I attempted this recipe with silicone liners these didn't cook evenly and also stuck to the silicone.
