5 Ingredient Trail Cookies

A calorie packed snack designed to keep you fueled properly throughout all of your toughest hikes.

Ingredients
  

  • 1 cup creamy almond butter mixed well
  • 1 cup coconut sugar
  • 1 egg, large
  • ½ tsp pure vanilla extract
  • ½ tsp almond extract optional

Method
 

  1. Preheat the oven to 350° and line a large sheet pan with parchment paper.
  2. Add all of the ingredients to a large bowl and use an electric hand mixer to beat for 1-2 minutes until combined completely. Use a small cookie scoop or your hands to form 1" balls. You should yield approximately 16 balls. Space them evenly out on the sheet pan. Use a fork to flatten slightly.
  3. Bake at 350° for 14-17 minutes until the edges are starting to brown and crisp and the middles start to set. Remove from oven and let cool on the sheet pan completely. Enjoy!
